Burrito Bowls Recipe!

This recipe from Pinterest was my inspiration… but didn’t really follow it at all :)  

Here’s what I did:
In small saucepan, 1 3/4 cups water  + 1 cup enriched parboiled rice (long grain) + salt, bring to a boil, then put lid on and turn burner to low (for 20 minutes or until water is absorbed)

In large skillet, brown 1 lb of hamburger meat, drain.
Add 1 tsp cumin, 1/2 tsp chili powder & 1/2 tsp garlic powder OR packet of taco seasoning. 
Add some salsa (I used World Table Salsa Casera) since it has the onions, tomatoes, etc. already in it. 
Add can of pinto beans (drained) and/or one can of black beans (drained and rinsed). 
Then cook on low for a while until beans are heated up! 
Then add rice to skillet & mix 

Put in bowls with shredded lettuce, shredded cheese, sour cream, avocado, salsa & topped with chopped green onion!   Can also add tortilla chips.  

Bryn calls it chili with salad - and loves it!!
