My 1st Apple Pie!

On Sunday, we visited Chris's grandma, then went over to my parents for a while before meeting the rest of the family at Jose's for Hayley's taco night fundraiser for the Central track team.   My mom had just made pies and gave us two slices of apple pie to take home to eat after dinner.  Was seriously the BEST we've ever had.   I put in a request for one for my birthday "cake".   

My parents are coming over for dinner tonight, so I thought it would be a good chance to make my own pie!  I have never made one by myself, so I did some research this morning to find the perfect recipe.  I love my "The America's Test Kitchen" Recipe books - and found a great recipe for the crust that called for VODKA!  It  I looked back and forth between their Blue Ribbon Apple Pie and this recipe for Best Ever Apple Pie.

We met Chris for lunch at Chick-fil-a, then I {crazily} took the girls by myself to the Pleasant Grove Walmart to get ingredients for the pie and groceries for dinner.  I already had a glass round baking pan,  a mat to roll out the dough, and a rolling pin {that was from my bridal shower... and I might have had to take off the plastic}
 First, I put Bryn down for her nap!!! :) 

Then I mixed up the dough, and forgot to take pictures.  I didn't use a food processor or a pastry knife (thought I bought one a while back, but couldn't find it)... just mixed it up in a bowl and used forks and this Pampered Chef crinkle cutter thing to cut in the butter and shortening.   Then I divided the dough in two, and wrapped it with plastic wrap and put it in the fridge while I did the apples!  I used 3 small Granny Smith apples and 2 large Braeburn apples. 

I mixed the apples up with all the sugar/cinnamon etc.  but got carried away and put the egg whites in this mixture over the apples!  I didn't realize it was to be brushed on the crust!!  Oops!  

Rolling out the dough and transferring it over to the pan wasn't the easiest thing!  Had to keep adding more flour to get it to not stick to the mat! 
  But finally got it :)

 The top crust was much easier!   I crinkled down the edges, then put slits in the top! 
 Then sprinkled it with sugar - just like my mom has always done!

Hopefully it tastes as good as it looks!!!!  So proud of myself! 

Update:  It was soooo good! :)  My parents both approved last night... and I might have had some again with my coffee this morning! Mmmmm!
