Let's eat them all!

While on Pinterest this afternoon, I came across this this recipe for broccoli cheese bites.  I am always looking for recipes that my entire family will eat, and it was nice because I had all the ingredients on hand!   

Ingredients

  • 1 (16 oz) package of frozen broccoli florets, cooked according to package directions
  • 1 1/2 cups shredded mozzarella cheese
  • 3 eggs, beaten
  • 1 cup Italian seasoned breadcrumbs

Directions

  1. Preheat oven to 375 degrees F. Line a cookie sheet with foil and spray with cooking spray.
  2. Cook your frozen broccoli — let cool and cut up any big pieces in the bowl.
  3. Mix together the broccoli with the cheese, eggs, and breadcrumbs with a wooden spoon.
  4. Form the mixture into 15 – 20 balls. Place on cookie sheet and flatten slightly with the back of your hand. Bake for 15 minutes. Flip the patties, then bake for an additional 10 minutes. Let cool slightly and enjoy!

Hollyn asked if we could go upstairs and cook in her kitchen in her playroom first before coming down to cook in mine while Bryn was taking her late nap!
I had a bag of Marketfresh broccoli, so I poked holes in the bag and put it in the microwave to steam (for 3 minutes)!  In a big bowl, I cracked 3 eggs (with Hollyn's help), 1 cup of regular bread crumbs (that she poured in) and 1 and a half cups of cheese.  The recipe called for mozzarella cheese, but we only had like a 1/2 cup left, so I also used cheddar cheese!   Once the broccoli was steamed, I chopped it up and added to the bowl for Hollyn to stir! 

I put foil on the cookie sheets and sprayed them with olive oil.  Next, Hollyn washed her hands to help me make balls.  She said she needed her tower, and didn't want my help!  


We used our hands and made little balls, then squashed them down.  Our hands were extremely messy after this, so we had to wash them again! 

Here they are on the cookie sheet ready to go in the oven!  (375 degrees - bake 15 minutes, then flip and cook another 10 minutes)

I can't say that at first I thought they looked very appetizing, but they tasted amazing, and even better dipped in ranch!    Hollyn and Bryn both LOVED them! 
Hollyn kept asking for more, but I told her that we had to save some for Daddy when he got home from playing golf.  She said "No, let's eat them all.  I don't want to save any for Daddy!"   Here's all that was left! :) 
I'm still so surprised that my picky picky eater willingly ate broccoli tonight and liked it! :)
